Mimi's Black Bean Salad
Perfect blend of flavors for a summer side dish. Great as a chip dip or eaten by itself!

Ingredients
6 servings
For the salad
2 x 15 ozcans black beans
2 cupsfrozen corn
4 ozcan green chiles
1 pintcherry tomatoes
3scallions
chopped
¼ cupcilantro
chopped
Optional
For the dressing
Instructions
Step 1
Chop all salad ingredients and mix together in a large bowl.
Step 2
In a smaller bowl, whisk together dressing.
Step 3
Pour dressing into large bowl with salad ingredients, mix together, and serve! Extra delicious if left to marinade for at least an hour. Optional to top with Avacado when serving. Keeps well for several days, just watch the tomatoes as they may get a little mushy after awhile.
