White Bean Chili Soup

This creamy, delicious white bean and chicken sausage chili is so comforting and hearty. You don't want to miss this recipe and you certainly will be adding it to your meal rotations! Side note: feel free to substitute the chicken sausage for ground turkey, ground chicken or shredded chicken 👍

Ingredients

2 Tbspbutter
or cooking oil
1onion
diced small
2poblano peppers
de-seeded and diced small
8chicken sausage links
cut into small pieces
1 tspgarlic powder
1 tspcumin
1 tsppaprika
1 tspblack pepper
1 tsponion powder
½ tspground ginger
¼ tspcayenne pepper
2 x 14 ozcans white beans
strained and rinsed
6 cupschicken stock
4 ozcream cheese
½ cupsour cream
4 ozaged white cheddar
grated
cilantro
for garnish
lemon wedges
for garnish
Instructions
Step 1
In a pot on medium-high heat, add butter or oil. Add onion, peppers and chicken sausage and mix together. Continue to mix until onions are translucent and liquid has mostly reduced.
Step 2
Add spices, cream cheese and sour cream to the pot. Mix together then once melted, add beans and chicken stock.
Step 3
Allow to boil. If you want a thicker soup, add a couple tablespoons of corn starch into the pot. Before adding the corn starch mix the cornstarch with water into a slurry, then add it in to avoid clumps.
Step 4
Add shredded aged cheddar into the soup and mix well.
Step 5
Serve with cilantro, extra cheese, sour cream and lemon wedges on the side.
