Instructions

Step 1
Preheat oven to 475
Step 2
Pour half of the lemon juice over the chicken
Step 3
Combine salt, pepper, granulated garlic & onion, thyme, rosemary, pepper flake, lemon zest & fresh garlic

Season chicken thoroughly
Step 5
Set aside to marinate
Step 6
Cook Wild Rice according to instructions and desired amount
Step 7
Sautee mushrooms over high heat for 4-5 minutes
Step 8
Season with a dash of salt, pepper & reserved Tbsp of fresh garlic
Step 9
Set aside until rice is done cooking
Step 10
Once rice is cooked, fold mushrooms into rice before serving, or serve on top rice
Step 11
Arrange chicken in a baking dish or pan
Step 12
Lay 1 or 2 lemon slices on each chicken quarter, leave some skin as exposed

Any remaining slices in bottom of pan
Step 14
Pour remaining lemon juice, chicken stock and wine in bottom of pan
Step 15
Add butter
Step 16
Place chicken in oven until fully cooked (170°-175°) and skin is golden brown and crisp
Step 17
(add chicken stock or water to base of pan if it dries out)
Step 18
Once chicken is cooked, serve with rice & mushrooms
