My version of the classic kunafa made with shredded phyllo dough, a sweet mozzarella-ricotta filling, and soaked in simple syrup!

Instructions
Step 1
Preheat your oven to 350f.
Step 2
Shred your thawed kataifi phyllo dough using your hands or a food processor.
Step 3
Melt your brown butter and mix in your kunafeh dye/orange food coloring. Pour it over your shredded kataifi and fold to evenly coat.
Step 4
Coat an 11inch baking pan, or two 6inch pans, with melted butter. Transfer half of the dough to the pan and press firmly to line both the bottom and sides.
Step 5
Mix all of the cheese filling ingredients in a separate bowl, and transfer to fill the crust and spread evenly.
Step 6
Cover with the rest of the dough and press firmly. Bake at 350f for 30-40min or until the top is a golden color.
Step 7
Make your simple syrup: combine all of the ingredients, except for the lemon, in a pot. Bring mixture to a boil while whisking, and then reduce to simmer for about 10 minutes. Add the lemon, and let the mixture completely cool down before using.
Step 8
Remove your kunafeh from the oven and immediately pour half of the simple syrup over it. Reserve the other half of the syrup to pour later when needed. Garnish with pistachios, and enjoy while it’s warm!
