Ingredients
2 servings
2green bell peppers
medium
¼ cupjasmine rice
dry
¼ cuponion
diced
¼ cupbaby bella mushroom
diced
1carrot
diced
¼ cupfrozen corn
0.25red pasta sauce
¼ cupwater
For topping
Instructions
Step 1
Preheat the oven to 400F
Step 2
cut the top off the green bell pepper, remove seeds, and rinse
Step 3
combine other ingredients in separate bowl, except the water
Step 4
Stuff mixture into empty bell peppers until gone or completely full
Step 5
Add 2 tblsp water to each pepper directly
Step 6
Fill a bread pan, or baking dish with ~ 1.25 in water and place bell peppers upright in water in pan
Step 7
cover pan with tin foil tightly, carefully place in oven, and let cook for an hour
Step 8
In a separate bowl, combine sauce ingredients and adjust to taste
Step 9
Turn off heat, carefully remove bell peppers, remove foil (Careful of STEAM)
Step 10
Top bell peppers with sauce before serving and allow to warm in cooling oven for ~5 more minutes
Step 11
If the oven is already cooled by this point, you can broil for 2 minutes
