Curried Kabocha Gratin

Instructions
Step 1
Preheat the oven to 400°F. Wash and dry the kabocha well to remove any dirt .
Step 2
Cut the tops off about 1-½ inches below the stem.
Step 3
Scrape out the seeds inside with spoon.
Step 4
Place the pumpkin and the stem on a baking sheet, and roast for 45 minutes. The inside of kabocha should be soft when pricked with a fork.
Step 5
Remove them from the oven and allow them to cool. Scrape out the flesh.
Step 6
Heat a large skillet over medium-high heat. Add the bacon, and cook about 3-4 minutes.
Step 7
Add onions and cook, stirring constantly, for 3 minutes.
Step 8
Add kabocha flesh, curry powder, cumin, cinnamon, salt and pepper. Add milk, and mix well.
Step 9
Pour kabocha mixture to empty baked kabocha, put cheese on top.
Step 10
Broil it until cheese melt, and lightly brown.
Step 11
Sprinkle shopped parsely.
