Instructions

Step 1
Preheat oven to 375 and grease a casserole dish
Step 2
Peel and slice potatoes on a mandolin
Step 3
Parboil the potato slices for 10-15 minutes in salted water
Step 4
Peel and slice a large white or yellow onion into thin rings using a mandolin
Step 5
Drain potatoes in a colander.
Step 6
Using the same pot (or a medium saucepan), lightly cook the onion rings in a tablespoon of butter until translucent. Set aside.
Step 7
In the same saucepan, use the remaining butter to cook the crushed garlic for about 2 minutes.
Step 8
Add to the garlic the 1/2 cup of cream and the Boursin cheese. Whisk to blend until smooth.
Step 9
Add in the sour cream and the spices, whisking constantly.
Step 10
Layers: start with a layer of potatoes, then the onions, then spoon in half the cream sauce, then half the grated cheese. Top this with the remaining potatoes, the remaining cream sauce, and the remaining grated cheese.
Step 11
Cover with a lid or foil and bake for 15-20 minutes, until bubbly.

Option: You can broil this until the top cheesy layer is golden.
