Grilled Nectarine, Burrata + Hot Honey Toast

large, or peaches or plums, grilled until starting to caramelise
65gburrata cheese
or ricotta cheese

Instructions
Step 1
Remove stone/pit from nectarine/peach or plums and slice fruit into wedges and coat with a tiny bit of extra virgin olive oil. Heat a frying pan/grill pan to medium high heat and then place the fruit wedges into the pan. Cook until they're starting to caramelise - be sure to flip to get each side. While you're doing this, you can also start toasting/grilling the toast (even in the same pan if it's big enough).
Step 2
Grill or toast your bread to desired crispness. I love grilling my bread with a bit of extra virgin olive oil.
Step 3
Spread the burrata or ricotta cheese onto the warm toast and sprinkle a little flaky sea salt onto the cheese if you wish. Pile on the grilled fruit and then dot some pink pickled onions and fresh basil leaves across the toast. Drizzle some hot honey over the entire thing to finish. ENJOY!
