Air Fryer Vegan Broccoli Cheese Dip

I learned this recipe from a website but can't remember where. The original called for the use of the stove to cook items, but I used my air fryer and microwave for items that need to be cooked. Depending on the size of your air fryer and blender, you may need split the recipe in half to cook all of it. It's a great dip for tortilla chips, celery, and other small vegetables.

Ingredients
40 servings
4 cupsrice
cooked, quinoa, and, or beans
10 cupsbroccoli florets
cooked, or other vegetables
3 cupcoconut milk
other milk
1 ⅓ cupnutritional yeast
4 cupsdairy free cheddar style shreds
4 tspgarlic powder
2 Tbspcajun seasoning
2 Tbspolive oil
4 tspcayenne pepper
to taste
2 pieceshatch peppers
or other, optional
4 Tbspwhole ground flaxseed meal
Instructions
Step 1
1. Cook rice, quinoa, or beans and place two cups of it in a bowl. set aside
Step 2
2. Meanwhile, steam broccoli, and other vegetables in microwave or air fryer (careful: top of vegetable may burn in air fryer); chop well and mix in the blender with cooked rice, quinoa, or beans
Step 3
3. In a small sauce pan, add milk, butter, nutritional yeast, cheese, garlic powder, sea salt and cayenne pepper. Place pan into the air fryer and set for 20 minutes after warm up. Halfway thru cook time, stir mixure to prevent burning on top. Take out of air fryer, pour over broccoli and rice mixture and mix in the blender. Spoon mixture into serving bowl and serve with fresh cut veggies or tortilla chips.
