Instructions
Step 1
Season the chicken breasts on both sides with sea salt and black pepper.
Step 2
Heat 1 tbsp of oil in pan over medium high heat.
Step 3
Add chicken and sauté for 4-5 minutes on each side until golden brown and cooked through.
Step 4
Transfer to a plate and cover to keep warm.
Step 5
Add the remaining tbsp of oil to the pan along with the garlic. Sauté for about 30 seconds until fragrant.
Step 6
Add the chicken broth. Stir to remove any bits stuck to the bottom of the pan.
Step 7
Simmer for a few minutes until the liquid is reduced by half.
Step 8
Add the cream and thyme. Return to a gentle simmer. Gently simmer again for a couple of minutes, continuing to scrape any bits from the bottom until the sauce thickens.
Step 9
Stir in the mustard at the end and turn off the heat.
Step 10
To serve, pour the sauce over the chicken or transfer the chicken back to the pan and cover it in sauce.
