2 tspmarjoram
finely chopped
1 tspthyme
5 tspsugar
¼ tspsalt
2 Tbspextra virgin olive oil
2 Tbspcanola oil
or grapeseed
The Salad
4 cupsescarole
thinly sliced, endive
0.5English cucumber
thinly sliced
½ cupgrape tomatoes
halved or whole
½ cupfeta
crumbled, or half recipe of Crunchy Feta
¼ cuppickled red onions
½ tspsalt

Instructions
The Salad
Step 1
Whisk together vinegar with herbs and olives
Step 2
Drizzle in oils while whisking
Step 3
Add salad ingredients to dressing, toss to incorporate
Step 4
Transfer to plate and add feta and onions

Step 5
Place flour in a medium bowl. Whisk Eggs with 2 tbsp of water. Add Panko to third bowl.
Step 6
Toss feta in flour, then egg wash, then panko
Step 7
Place coated feta in fridge for 30 minutes
Step 8
Fry until golden brown
