Fantastic use for fresh or leftover cabbage. The dressing has a rich, delicious Asian flavor that pairs very well with the cabbage and other veggies.

Ingredients
2 servings
2 cupsgreen cabbage
thinly sliced
2 cupsred cabbage
thinly sliced
3 Tbsppeanuts
chopped
3scallions
trimmed and chopped
½ cupfresh cilantro
or parsley, chopped
¼ cupginger and tahini dressing
or more to taste
For the Dressing (makes 1 cup of dressing)
Instructions
Step 1
For the Salad: Put all the ingredients in a large bowl. Add the dressing and toss. Taste and add more dressing if desired.
Step 2
For the Dressing: Combine ingredients in a medium bowl and stir or whisk vigorously to combine.
