Plcae the chillies, groundnut oil and paprika (if using - it will add colour) in a heavy saute pan and warm over a very low heat - the oil should never be above 140 degree celsius until the chillies have lost all their water content (around 30 mins). The smoke from this will make you choke, so open the kitchen windows beforehand! Remove the pan from the heat and add the olive oil. Allow to cool, then transfer to a covered container for 48 hours. Filter well through a sieve and store in sterilised bottles or jars in a cool, dark place for up to a year.
