Instructions
Step 1
Heat the oil over a high heat. Fry pinion, peppers and chilli for 3 mins until just softened. Add tomatoes and dried herbs. Season and simmer for 3 mins
Step 2
Break an egg into a small cup. Using a wooden spoon scrape a hole in the mixture then quickly drop in the egg. Repeat with the others spacing evenly around pan. Cover and simmer for 3-5 mins until the eggs are just set. Sprinkle with parsley and serve with crusty bread
