This quick and easy vegetarian pasta recipe is made with grilled peppers, onion, zucchini, and tossed in olive oil, oregano, garlic, and Parmesan cheese.

Instructions

Step 1
Preheat grill on high heat. Prepare pasta according to package directions and set aside. Peel onion and cut into thick round slices. To keep in tact while grilling, insert 2- 3 toothpicks around the outer edges; set aside While grill is heating and pasta is cooking, whisk together olive oil, garlic, oregano, salt, pepper, and basil in a large mixing bowl. Add the vegetables to the bowl and toss to coat well Place vegetables in a single layer on the grill and cook until slightly charred and tender. Flip once and keep the bowl of marinade close by. When veggies are cooked place back in the bowl with the marinade Toss cooked pasta into vegetables and give a good stir. Let sit for a moment so all ingredients can marry. Add salt and pepper to taste. Sprinkle with Parmesan then ENJOY!
