Lebanese Nammoura, a cake made from semolina flour, soaked in aromatic rose water syrup while it's still warm.
Super easy to make and widely known across the Middle East.

Step 1
In an electric mixing bowl, mix the sugar, semolina, and butter together. Add in the milk, orange blossoms water, baking powder, yogurt and mix on low speed for 1-2 minutes to obtain a thick batter.

Line a nonstick pan Max 5 cm high (30 x 40 cm) with parchment paper, brush it with the tahini paste and then place the batter on it and with a spatula spread out evenly on the pan.

let it rest for about 1 hour until the semolina absorbs the moisture and cut out the Nammoura into diamond shape patterns, or whatever you prefer, then add the almonds on top
Step 4
Bake the Namoura cake in a preheated 180C oven for 30- 40 minutes until the edges start to brown up, then turn on the top broiler a few minutes to obtain a darker golden color on top. (Watch it closely so you do not burn it).
Step 5
Remove from the oven and pour the 1.5 cups of sugar syrup evenly over the Namoura while it's hot, and let it cool at room temperature for a 4 hours before serving.
Step 6
You may Prepare rose water syrup during bake time or before.
