Step 1
Preheat the oven to 350° F. While it’s heating, line a baking sheet with parchment paper or a reusable cookie mat.
Step 2
In a small bowl, combine the egg replacement and water and stir together. Allow mixture to sit for 2-3 minutes.
Step 3
In another small bowl, whisk together the 2 tablespoons of sugar and 1 tbsp of cinnamon for the topping. Set aside.
Step 4
In a medium bowl, whisk together the flour, salt, cream of tartar, baking powder, and baking soda.
Step 5
In a large bowl, cream together the sugars and melted butter… the sugars should be completely combined.
Step 6
To the creamed butter, add your egg replacement and vanilla, mix until combined.
Step 7
Add your dry ingredients to the large mixing bowl containing the wet ingredients.
Step 8
After a few mixes, add in your tablespoon of plant based milk.
Step 9
Mix only until everything is incorporated.
Step 10
Using a tablespoon, scoop out a ball of dough so it overfills the tablespoon measurement a bit.
Step 11
Roll the dough into a ball, give it a roll in your cinnamon sugar mixture, and place on baking sheet.
Step 12
Repeat steps 9 and 10 until dough is gone.
Step 13
Bake cookies for 8-10 minutes.
