Instructions

Step 1
Add the pancetta to the pan and cook until colour gets added on a medium heat. It should take around 5 minutes
Step 2
Add the diced onions and cook until translucent
Step 3
Move to the side and add the chicken thighs. Cook 80% of the way. Cook skin side down and do in batches if needed, leaving any fat still in the pan
Step 4
Add the rest of the ingredients (bar the parsley) and bring it to a simmer then lower the heat and allow this to simmer for 20-25 minutes.
Step 5
Remove all the chicken and turn the heat up to reduce the sauce down to 1/3 of what it is. Remove the bay leaves and thyme
Step 6
Add the chicken back in along with the parsley and it's ready to serve. I enjoy this with some garlic cubed potatoes. Enjoy!
