Instructions

Step 1
In one large pot on medium heat, add the olive oil.
Step 2
Add the carrots, leeks and salt and sweat down for 10 minutes.
Step 3
Add the garlic and stir, cooking until fragrant.
Step 4
Once the veggies are softening, push the side and add the chicken. Brown for about 5-10 minutes just until turning a bit golden.
Step 5
Add the chicken stock so the chicken is covered. Add sage, mustard, salt and pepper and cover with a lid. Reduce to low and simmer for about 40 minutes.
Step 6
After 40 minutes, remove the chicken from the pot and shred. Put the chicken meat back into the pot. Add crème fraiche, parsley and lemon juice. Test taste and season if need and serve!
