Instructions

Step 1
In a medium bowl, beat 3 eggs with salt and pepper. Add chopped spinach and shredded cheese (optional)
Step 2
On stove, heat 1tbsp vegetable oil in a small pan on low-medium heat. Pour egg mixture into the pan and cover with lid (no stirring). Let sit for about 2mins or golden brown. Turn the omelette over and cook another side for another 1min
Step 3
Move omelette to the serving plate, top with slices of avocado, tomato and coriander (optional). Add salt and pepper to finish
