1 cupall purpose flour
ΒΎ cupcocoa powder
1 tspnbaking soda
1 tspnsalt
1 stickbutter
room temp
ΒΎ cupbrown sugar
ΒΌ cupgranulated sugar
1egg
1egg yolk
1 tspnvanilla extract

For the Ganache:
Step 1
-Place all ingredients in a microwave safe bowl and microwave on high for 1 minute. Allow the mixture to sit in the microwave for an additional minute after it is done, then take out and whisk vigorously. If the chocolate isn't melted all the way, microwave in 10 second intervals, whisking in between, to completely melt the chips.
-Place the ganache in a piping bag or plastic bag and allow to cool until it is a good consistency to pipe onto the cookies.
For the Cookie Dough:
Step 2
-Set your oven to 350* and sift together the flour, cocoa powder, baking soda, and salt then set aside. Line two baking tray with parchment paper.
-With a hand mixer or stand mixer fitted with a paddle attachment, cream together the 1 stick of butter as well as both types of sugar until lighter in color and more fluffy.
-Add the egg and egg yolk and continue to beat on medium high speed for about 2 minutes until combined well. -Scrape down the bowl then add the dry ingredients and mix on low speed to combine everything well. -Using a spoon or ice cream scoop, make 10 even balls with the dough and place the balls evenly spaced on the 2 baking sheets. -Bake for 14-16 minutes, or just until they cookies are set. Cool completely.
-To finish, pipe the chocolate ganache onto the bottom side of one cookie, then place another cookie on top to create a sandwich. Make sure the ganache comes all the way to the edge.
-Roll the cookies in the crush peppermint candy and allow to set for 30 minutes before serving.
