Crispy Tofu Stir Fry

Ingredients
2 servings
1 packageinstant brown rice
organic
1 cupshiitake mushrooms
chopped
1 headbroccoli
chopped
8mini bell peppers
sliced
1 packagefirm tofu
2 tablespoonscornstarch
or arrowroot powder, for the tofu
salt
to taste
2 teaspoonsgarlic powder
go crazy with this if you’d like
1 tablespoonavocado oil
for tofu
2 tablespoonsavocado oil
for cooking the veggies
pepper
to taste
For the stir fry sauce
Instructions
Step 1
Start by pressing the tofu between two towels to remove the excess moisture.
Step 2
Cut into cubes and transfer to a bowl. Sprinkle with salt, pepper, garlic powder, cornstarch or arrowroot powder and shake.
Step 3
Gently coat with your avocado oil, shake again and transfer to your air fryer. I like to cook mine at 375 degrees for 8 min, shaking the tray at 4 min.
Step 4
Cook for another 8 min at 400, shaking the tray every 4 min. *if not as crispy as you’d like, add increments of 2 min.
Step 5
While tofu is cooking, assemble your sauce mixture in a glass jar and set aside.
Step 6
Once tofu is cooked, set aside. Next, add all the veggies to a large pan with avocado oil and cook on medium heat until the veggies start to wilt and become fragrant (about 6 min)
Step 7
Next pour in your stir fry sauce and let simmer for about 5 min, stirring occasionally.
Step 8
Next add in your tofu, stir and let sauce thicken for a few min.
Step 9
Plate on top of your microwaved rice and enjoy!
