Ingredients
4 servings
3 cupswater
1 cupapple cider vinegar
1 poundshrimp
peeled and deveined, tail on, raw, large
⅓ cupshallots
minced
2 tablespoonslow sodium soy sauce
2 tablespoonsfresh lime juice
1 tablespoonhoney
3 tablespoonscanola oil
1 tablespoontoasted sesame oil
3 cupswatermelon
chopped
2 cupsromaine lettuce
chopped
2 cupsfresh spinach
1avocado
ripe, large, cut into wedges
½ cupfresh cilantro leaves
loosely packed, divided
1 teaspooncrushed red pepper
½ teaspoonblack sesame seeds
½ teaspoontoasted sesame seeds
Instructions
Step 1
1. Fit a steamer basket into a stock pot. Add three cups of water and vinegar, bring to a boil. Add shrimp and cover and steam for 5 minutes. Remove shrimp to a baking sheet and chill for 15 minutes
Step 2
2. Stir together shallots, soy sauce, lime juice and honey in a bowl. Let stand 10 minutes and whisk in canola oil and sesame oil
Step 3
3. Add watermelon, lettuce, spinach, avocado and 1/4 cup cilantro to shallot mixture and toss to combine
Step 4
4. Place salad on a large platter, leaving any remaining dressing in the bowl. Add shrimp, crushed red pepper and remaining 1/4 cup cilantro to the bowl. Toss to combine and place shrimp mixture on the salad
Step 5
5. Sprinkle with sesame seeds
