Instructions

Step 1
add olive oil to a pot, heat over medium heat and add diced onion
Step 2
Mince the garlic and add to the pot
Step 3
Once onion and garlic are fragrant, add carrots, spices, lentils, diced tomatoes, rotel, and veggie broth
Step 4
Everything should be submerged and soup will be runny at this point (you can check salt and either add more veggie broth or water)
Step 5
Bring to a boil, then reduce heat back to medium and cover
Step 6
Allow to cook until lentils are soft
Step 7
Carefully remove ~1 - 1.5 cups of soup and place in blender and blend until smooth
Step 8
Pour blended soup back into the pot and mix; this should thicken the soup considerably
Step 9
You can remove the lid and continue to simmer to remove more liquid if desired
