Instructions

Step 1
Place the sugar and apple juice in a medium saucepan. Stir over a low heat until the sugar dissolves. Bring to the boil.
Step 2
Add the rhubarb and ginger and reduce the heat to low.
Step 3
Cover and cook for 6-8 minutes or until the rhubarb is soft but still holds its shape.
Step 4
Set aside in the pan to cool.
Step 5
Divide the yoghurt among shallow serving bowls and top with the rhubarb.
Step 6
Sprinkle with the mint leaves to serve.
