Step 1
Start by cutting the whole onion into a small dice. Cut bell peppers into thin long strips and mince the garlic clove.
Step 2
Oil a large non-stick frying pan and caramelize the onion, bell pepper and garlic and low heat. The veggies are ready for step 3 when onions become translucent, bell peppers are soft, and garlic is golden and aromatic.
Step 3
At this point add the Sofrito seasoning in with the veggies. Additionally add in the fresh basil and pine nuts ( do not let pine nuts burn, you can avoid this by staying on a low heat).
Step 4
Take three sausages out of the pack and slice them into 1/2 centimeters thick rounds. Then cut the rounds in half and stir the sliced sausage into the caramelized veggies. (The sausage is fully cooked so they only need to be warmed, no worries about raw sausage!)
Step 5
Add in the two packages of gnocchi, stirring them in the pot making sure they get tossed with all the oil and flavor from the vegetables. The gnocchi is starchy and delicate so at this point you may want to add a tad bit of extra oil to prevent sticking. It is also important to cook the gnocchi on low heat. They don't take long to cook as they they are pre-made and just need a quick warm in the pan. However, you can keep them in the pan a little longer after they're warm and add additional oil to get them crispy. Lastly add in the tomatoe sauce. I do this last because it makes cooking the gnocchi easier and allows for the option to cook the gnocchi crispy. Stir the sauce into the veggies and gnocchi. Add salt to taste as needed. Warm the sauce for 3 minutes on low to medium heat. This recipe makes 6 small to regular sized portions or 3 large servings using the same recipe. Enjoy!
