Step 1
Preheat the oven to 180 degrees F/180 degrees C and line a large baking tray with parchment paper. Add the green pepper, onion and garlic to the baking tray, and mix with the olive oil. Bake for 30 minutes.

Meanwhile, cook the pasta according to instructions on packaging.
Step 3
Next, transfer the roasted vegetables to a blender. Also add he plant based milk, nutritional yeast, apple cider vinegar, salt, garlic powder and spinach. Blend until smooth, then transfer to a skillet and mix with the pasta.
Step 4
Add the cheese, and serve when the cheese melt.
