Instructions
Step 1
Cut bacon in half and place the 4 pieces in a cast iron pan on low-medium heat. As the bacon is cooking, slice avocado and set aside.
Step 2
Heat tortillas on medium heat in a dry pan to soften and get a small sear. While they are warming, melt butter in a pan on low heat, adding eggs once butter is melted and scrambling gently until they reach a custardy texture.
Step 3
Remove eggs and tortillas from heat and dry bacon of extra grease with a paper towel.
Step 4
Split evenly between three tortillas and garnish with sour cream (and if you have it, a salsa seca or salsa macha - Xilli's Salsa Seca is my favorite and shown in the photo)
