Smokey Bourbon BBQ Steaks with Roasted Garlic Mashed Potatoes

Step 1
Preheat your oven to 350°F (180°C).

In a small bowl, mix together the BBQ sauce, bourbon, smoked paprika, garlic powder, onion powder, salt, and black pepper.

Place the ribs in a baking dish and coat them evenly with the BBQ sauce mixture. Cover the dish with aluminum foil and bake for 1 1/2 hours.

While the ribs are cooking, prepare the mashed potatoes. Add the potato chunks to a large pot of salted water and bring to a boil. Cook the potatoes until they are tender, about 15-20 minutes.

Preheat your grill to medium-high heat. Slice off the top of the head of garlic to expose the cloves. Place the garlic on a piece of foil, drizzle with a little olive oil, and wrap it up. Grill the garlic for about 20-30 minutes, or until the cloves are soft and fragrant.

Once the potatoes are cooked, drain them and add them to a large bowl. Squeeze the soft garlic cloves out of their skins and add them to the bowl with the potatoes. Add the butter, milk, salt, and pepper, and mash the potatoes until they are smooth and creamy.

Remove the ribs from the oven and carefully unwrap the foil. Increase the oven temperature to 425°F (220°C). Brush the ribs with the remaining BBQ sauce mixture and return them to the oven. Bake for an additional 15-20 minutes, or until the ribs are tender and caramelized.

Serve the ribs with the roasted garlic mashed potatoes and any additional BBQ sauce on the side.
