Ingredients

1spaghetti squash
medium
4 tspolive oil
divided
1 tspsalt
divided
1 tsppepper
divided
2 tspminced garlic
1 lblean ground turkey

1 x 14.5 ozcan diced tomatoes
we use Rotel, or Italian seasoned
½ tsponion powder
1 tspbasil
divided
1 tspleaf oregano
whole, divided
¼ cpart skim ricotta cheese
½ c1% cottage cheese
1 tspcrushed red pepper flakes
1 cshredded low fat mozzarella cheese
Instructions
Step 1
1. Pre heat oven to 400 degrees F
Step 2
2. Prepare the spaghetti squash. Cut in half, and remove seeds and stringy pulp. Rub 1 tsp olive oil into each squash ½ and season each with ¼ tsp salt & pepper. Bake at 400, shell side up, for approx. ½ hour or until fork can easily poke thru shell.

3. Meanwhile in a large saucepan, saute garlic in remaining olive oil over medium heat until fragrant. Add turkey. Season with ¼ tsp each of salt & pepper, and cook till browned.

4. Add tomatoes, onion powder and ½ tsp each of basil and oregano. When sauce starts to bubble, reduce heat to a simmer until thickened. (about 3-5 minutes).

5. Combine ricotta and cottage cheese in medium bowl. Season with crushed red pepper flakes and remaining basil, oregano, salt & pepper. Lightly mix until combined.
Step 6
6. When spaghetti squash is fully cooked, flip in the baking dish so that it is now shell side down. Lightly scrape flesh with a fork to create spaghetti-like strands.
Step 7
7. Evenly divide ricotta mixture between each squash half. Repeat with meat sauce. Top each ½ with ½ c mozzarella cheese.
Step 8
8. Turn oven to broil, and cook for an additional 2 minutes, until the cheese is browned and bubbling. Divide into 4 servings.
