Cinnamon Sugar Monkey Bread (uses pizza dough)

Have extra pizza dough on hand? Why not make some cinnamon sugar monkey bread with it? Perfect to share over a lazy weekend brunch or it's just as good when paired with a cup of coffee/tea as an afternoon treat! Lining the tin with butter and cinnamon sugar first and then topping the entire creation with double cream mean that as the monkey bread bakes, it creates its own glorious cinnamon caramel sauce...

Instructions

Step 1
Mix sugar and cinnamon together.
Step 2
Generously butter a nonstick 1 lb loaf tin and sprinkle liberally with about 2 Tbsp of the cinnamon sugar
Step 3
Cut and shape pizza dough into 20-30g balls (about the size of a ping pong ball). They don’t need to be perfect, just get them into a rough ball shape.
Step 4
Dip each dough ball into the melted butter and then roll in the cinnamon sugar. Place into the tin. There is no tidy way to do this…your fingers will get a bit messy!
Step 5
If using pizza dough made with yeast, let proof 1 hour or until the dough balls are just starting to reach the top of the tin. Sourdough pizza dough will proof a bit slower, so expect it to take about 2 hours.
Step 6
Preheat oven to 180C/355F.
Step 7
Drizzle 3 tablespoons of heavy cream/double cream evenly over the top of the monkey bread. If you have any extra cinnamon sugar, sprinkle this over the top too.
Step 8
Pop into oven and bake for around 25-28 minutes. To double check it’s finished, insert a skewer into the lower dough balls in tin to make sure there are no longer any raw dough spots - the skewer should come out clean. A temperature probe should read 90C/185F.
Step 9
Remove from oven and let cool for five minutes. Slide knife around the edges of the tin, place a cutting board or plate over the top and then tip it upside down. Give the tin a few little taps to release the monkey bread and then lift it away. You will be greeted with gorgeously sticky cinnamon caramel coated dough balls, all ready for pulling apart!
