Buffalo Chicken Tostadas

Instructions

Step 1
Cook and shred the chicken. Prepare the Cashew Sour Cream.
Step 2
Preheat oven to 350 degrees. Place tortillas on a baking sheet lined with parchment paper.
Step 3
In a small bowl, toss the shredded chicken with hot sauce. Top each tortilla with 1 oz. buffalo chicken, 25g corn, 25g tomatoes, ½ Tbs. cheese and 1 Tbs. green onions.
Step 4
Bake for 10 minutes or until all the ingredients are heated through.
Step 5
Top each tostada with ½ Tbs. Cashew Sour Cream. Enjoy 2 tostadas per serving.
