Vegan Tzaziki Dressing
100gvegan yoghurt
50gcucumber
thinly diced
1fresh garlic clove
thinly chopped
1 Tbspvinegar
1 Tbspagave syrup
salt
pepper
garlic
paprika powder
1 Tbspwater
to thin
To serve
Instructions
Step 1
Cut veggies and add to a baking tray. Spray with a little bit of olive oil and add spices of choice. Bake at 200C/ 400F for 30-40min. Make sure not to burn the broccoli and spring onion.
Step 2
Cut tempeh in cubes and marinate in some soy sauce and garlic powder. Bake in the oven or air fry at 200C for 12 min. You can also bake it alongside with the veggies.
Step 3
Prepare the dressing by whisking together all ingredients. Then serve the veggies and the tempeh with lettuce of choice, corn and (vegan) feta.
