Instructions
Step 1
Cover the chicken breasts with plastic wrap. Pound to flatten to about ½ inch thick.
Step 2
Season the chicken breasts evenly with the salt and pepper.
Step 3
Cook the bacon in a skillet over medium heat until crisp. Set aside the bacon but leave the drippings in the skillet.
Step 4
Add the chicken to the skillet and evenly brown for 5–6 minutes per side. Set aside the chicken but keep the drippings.
Step 5
Add the onion and stir-cook for 2 minutes until softened and translucent.
Step 6
Add the broth and apple cider. Bring to a boil and scrape the browned bits from the skillet.
Step 7
Cook for 4–5 minutes until thickened.
Step 8
Serve the chicken with the bacon and prepared sauce on top.
