Instructions
Step 1
Chop up all vegetables into small cubes.
Step 2
In a medium-sized pan, heat up vegetables in Olive oil until the sweet potatoes are soft (approximately 25 minutes).
Step 3
Remove from heat and set aside.
Step 4
In a different pan, fry the four eggs.
Step 5
Place the eggs on top of the sweet potato hash. Enjoy!
