Peri Peri Chicken with Spicy Rice

Instructions

Prep the chicken

Step 1
Cut the chicken in half to cook it faster. Add a touch of salt and black pepper to both sides. Let the chicken brine while you make your marinade.

Peri peri marinade

Step 2
Cut and add the onions, garlic, lemon zest and the lemon to a blender. Add some dried red chili’s (I used extra hot ones), tomato sauce (or tomato paste), paprika powder, parsley, salt and citric acid to the mix.
Step 3
Add some brown sugar to balance out the heat and then add vinegar, water and oil as well. Blend the marinade until you have a smooth sauce.

Marinate the chicken

Step 4
Marinate the chicken (front and back) and make sure to leave some of the marinade for later. For the best taste, leave the chicken to marinate over the night but an hour is enough as well.

Cooking the chicken

Heat up a grill and add some oil. Grill the chicken on both sides till they get some nice grill marks.
Step 6
Once you’ve taken your chicken off the grill, let it rest and add the left over marinade to the chicken.
Step 7
Add your chicken to a pre-heated oven at 200 celsius for 1 hour. Make sure to baste the chicken every 15 minutes.

Spicy Rice

Add some oil to your pan and add the onions. Wait till they become soft and ass your garlic.
Step 9
Add the tomatoes, veggies, red chili powder, cumin, paprika and salt and sauté.
Step 10
Add the water and bring it to a simmer. Add the rice (soaked and cleaned) to the pan and let it cook till there’s some water left at the top.

Turn the heat to low and cover the pan with a lid, I always cover the lid with a clean table cloth as well. Let the rice cook for around 15 to 20 minutes

Serve

Take your chicken out of the oven and let it rest before you cut it.
Step 13
Serve your chicken with the spicy rice and some nando’s sauce!
