Instructions
Step 1
In a pot, add water and turn on heat. Just before boiling point, add your eggs and boil for 7-8 minutes (Add splash of vinegar to get your eggs to peel better later).

After 7-8 minutes, turn off heat and wash your eggs in cold water. Let them sit in cold water for 3-5 minutes before peeling your eggs.

In a bowl, add the two peeled eggs, mayo, chopped green onions, salt and pepper and smash + mix well.

Step 4
Toast 2 pieces of bread.

On one side, spread a layer of sriracha.

Then, spread a thin layer of the egg mixture on top of the sriracha.
Step 7
Place the third peeled whole egg in the middle of the bread.
Step 8
Cover the whole egg with leftover egg mixture and spread it around.
Step 9
Place the other bread on top, gently press and slice in the middle!
