Instructions
Step 1
Chop spam and cook in 1 tbsp oil until crispy and add brown sugar and 1 tbsp of soy sauce.
Step 2
Add shallots and garlic and cook until fragrant, then add kimchi. Cook for 1-2 minutes and add rice.
Step 3
Add kimchi juice, soy sauce, fish sauce and sesame oil. Toss this together.
Step 4
In separate pan, cook 3 eggs (scrambled) then add this to the fried rice. Cook for another 2-3 minutes.
Step 5
Roll the fried rice into full seaweed sheets. Add mozzarella cheese. Depending on how hot the rice is and how much cheese is added, you may want to microwave this for 15-30 seconds to melt the cheese. It will make the seaweed sheet softer, but we don’t mind it for the extra stretchy cheese! :)
