Step 1
Start with mixing the harissa paste and mayo into a sauce and put to the side.
Step 2
Then slice the onions, tomatoes and parsley. Mix in a bowl with olive oil and season with salt.
Step 3
Peel and slice your potatoes into fries and leave to soak in cold water.
Step 4
Thinly slice the onions and get a pan on a medium high heat. Add the butter and the onions. Season with paprika, chilli powder and salt & pepper. Cook down until nicely caramelised.
Step 5
Then heat oil in a large pan to 160c and fry the fries until they begin to crisp. Remove, heat the oil to 190c and fry again until golden brown and crispy.
Step 6
Cook the sausages on a medium heat for 8 - 10 mins
Step 7
Slice open a fresh baguette, throw it all together and enjoy!
