Instructions
Step 1
Cut and boil the potatoes until soft.
Step 2
Mash potatoes and add in butter to make smoother. Then add in the thyme, garlic powder, parmesan cheese, salt, and pepper. Mix completely.
Step 3
Cover the mash potatoes with plastic and regrigerate for 30 mins.
Step 4
Mix, 1 cup of breadcrumbs with 1 tablespoon of Parmesan Cheese. Add in pepper, paprika and some garlic powder.
Step 5
In another bowl whip together eggs and butter.
Step 6
In a third bowl, add in about 1/2 to one cup of butter./
Step 7
To make the croquetas take a portion with a spoon, press it into your hand and add in a cube of cheese before forming into a ball. Dip the ball into the flour. Continue until you use up all of the potato mixture.
Step 8
With each ball, dip it in egg, then breadcrumbs, back into the eggs and finishing with bread crumbs. This double dip makes them more crispy.
Step 9
Fill a pot with oil and heat it on the stove. Once the oil is hot, place the balls a few at a time and boil until cripy. Remove from oil and place on a wrack unitl cooled and oil has dried off.
