Instructions

Step 1
Wash the rice until the water runs clear and soak for at least 1 hour.

Step 2
In a clay pot, sauté the thinly sliced chinese sausage and chopped shiitake mushrooms until the fat has rendered from the sausage. Remove the sausage and mushrooms from the pot and add the soaked rice.

Step 3
Lightly sauté the rice in the pot for around 30 seconds then add the chicken stock. Bring it to a simmer and reduce the heat to low. Cover the pot with a lid until the rice has absorbed enough stock to make the top of the rice visible. (~5-10 minutes).

Step 4
Add the chicken and the dark soy sauce, shaoxing wine, and cornstarch to the rice and cover with a lid to cook. (~7-10 minutes). Add the sausage and mushrooms back into the pot.
Step 5
Take pot off the heat and garnish with chopped scallions and sweet soy sauce. The bottom of the rice should be crispy.
