Ingredients

For the Stuffed Avocado
4slices bacon
1avocado
halved and pitted
0.5fresh lemon juice
½ cupchicken breasts
diced or shredded, baked
1green onion
washed, trimmed, and sliced

For the Lemon Dressing
Instructions
Step 1
Pan fry the bacon until crispy. Remove to paper towel lined plate. When cool, crumble into a bowl.
Step 2
Scoop the flesh out of the avocado, and dice. Add diced avocado to bowl with bacon. Keep the skins.
Step 3
Squeeze some lemon juice over avocado and skins to prevent browning.
Step 4
Add the chicken and the white part of the green onions to the bowl with bacon and avocado, stir to combine. Set aside.
Step 5
Whisk together all the dressing ingredients in a mixing bowl.
Step 6
Pour dressing over all the ingredients in the other bowl.
Step 7
Spoon the mixture into the avocado skins.
Step 8
If desired, top with a dollop of sour cream and garnish with fresh parsley and green onions.
Step 9
For a quick version, dress with your favorite store-bought keto salad dressing.
