Step 1
Chop onion, potato, carrot, French beans, and (optional) cauliflower and green peas.

In a grinder, add ginger, garlic, and green chillies.

Grind to a paste.

In a cooker, add ghee and whole spices.

Add onions and fry for 2 mins or till the onions turn slight golden brown.

After the onions have turned golden and translucent, add the chopped potatoes and fry for a minute.

Add the carrots and green beans (and any other veggies you wish to add) and fry for another minute.

Add the ginger garlic paste and mix well.

Add salt to taste, and garam masala. Stir well.

Add soaked basmati rice and mix.
NOTE: For a more fragrant and long-grained pulav, soak the basmati rice in water for upto an hour before adding.
Step 11
Add water. Give it a stir and cook for 2 whistles of the pressure cooker.

Serve hot with raita.
