Lemony Salmon Pasta 🍝 A nutrient dense recipe with tons of greens and quality fats. You can opt for no salmon if you prefer and it's still super delicious 👌 This one is from my app where it aligns with multiple health goals including mood and mental wellbeing, brain wellbeing, general skin health and general wellbeing. It has a shelf life of 2 days so you can enjoy any leftovers for lunch the next day too 🙌

Instructions

Step 1
1. Gather your ingredients.

2. Bring a large pan of salted water to the boil. Once boiling, add the spaghetti and cook for 3 minutes.

3. Add the salmon to the pan and cook for a further 5 minutes, or until opaque. (Omit this step if not using the salmon - just continue to cook the pasta for a total of 8 minutes).
Step 4
4. Add the kale, asparagus and peas, bring back to the boil and cook for 2 more minutes.
Step 5
5. Test the spaghetti to ensure it is cooked through and cook for a further 1-2 minutes if needed. Reserve a mugful of the cooking water, then drain and return to the pan.
Step 6
6. Stir through the olive oil and reduce the heat to low. Add the grated garlic, capers, creme fraiche, parsley, lemon zest and juice and stir to combine.
Step 7
7. Add a little of the cooking water to loosen the sauce if needed. Season well with salt and pepper and then serve.
