Instructions
Step 1
In a pan begin to heat up your extra virgin olive oil and onion. Stir fry until transparent.
Step 2
Toss the green peas, a pinch of salt, a scrunch of pepper, with some hot water into your pan. Let this cook for 5-10 minutes.
Step 3
Remove most of the cooked green peas, making sure to leave some behind, and blend them together.
Step 4
Take the blended mixture and pour it into a strainer until only the cream has been sifted back into the pan.
Step 5
Add more hot water and take it to a boil.
Step 6
Pour the uncooked Tubetti pasta into your pea sauce and stir. Make sure to add water as you go so the pasta can continue to absorb the sauce.
Step 7
While the pasta is cooking get a separate bowl and whisk together the Pecorino Romano and Parmesan cheese with your egg.
Step 8
When the Tubetti is al dente incorporate your cheese mixture into the pan to make it smooth and creamy.
Step 9
Serve and enjoy.
