Instructions

Step 1
Preheat oven to 425°F.

Wash sweet potatoes with warm water.

Poke sweet potatoes a few times with a knife. Coat with olive oil, salt, and pepper. Cook in the oven for 1 hour or until potatoes are fork-tender.

In a skillet, brown meat, saute bell peppers, onion, garlic with kale, and black beans with seasoning.

Rost beans before adding to the mixture if you desire.

Next, add the pasta sauce, lime juice, and tomato paste, let simmer for a few minutes.

When potatoes are done cut them in half and serve the mixture on top and enjoy!
