Vegan Chickpea Sandwich!

Instructions

Step 1
Start by soaking, cooking and resting the chickpeas. Allow them to cool a bit before mashing them (you can keep some chickpeas whole if you like!)
Step 2
Mix the chickpeas with the vegan mayo, mustard, soy sauce, syrup and harissa sauce. Finely chop the chives and celery and add those too.
Step 3
Toast your bread slices if preferred. Assemble the sandwich by adding the chickpea filling, some lettuce, and the pumpkin seeds for some crunch. Enjoy!
