Instructions
Step 1
Add the pasta to a saucepan of boiling salted water and cook until al dente
Step 2
Add oil to a frying pan over medium heat. Cook the onion and garlic until soft, about 5 minutes. Add the tomato paste and spices and cook for another 2 minutes.
Step 3
Add the vodka, occasionally stirring, cook for 5 minutes on medium low heat until the alcohol has evaporated. Transfer to a food processor and blend until smooth.
Step 4
Transfer the sauce to a frying pan and pour the vegan double cream, stirring often over low heat. Transfer the cooked pasta, vegan parmesan cheese and toss. Serve with fresh basil
