Instructions

Step 1
Cut the butter into very small cubes. Place on a plastic plate and let chill in the freezer for at least 10 minutes. You can also grate the cheese if you have a grater available.
Step 2
In a large bowl, whisk together the remainder of the dough ingredients.
Step 3
Add the chilled butter to the dry ingredients and mix with your hands until all the butter pieces are covered.
Step 4
Add water 1 tbsp at a time to the bowl while mixing the dough together with your hands. You are not looking to melt the butter here, simply crumble it. Continue to add water until the dough reaches a soft texture that holds together when you squeeze it in your hand.
Step 5
Flatten the dough with your hands into a rectangle and wrap in syran wrap. Let chill for 2 hours.
Step 6
While you let your dough rest, mix together all the filling ingredients in a medium sauce pan and bring to a boil over medium heat. Reduce heat and let simmer covered for 6 minutes or until the fruit softens. Let cool.
Step 7
With your hands, flatten out the dough until it is about 1/2 inch thick. Try to maintain the rectangle shape but at this stage its not crucial.
Step 8
Fold the dough onto itself as if you were folding a letter. Press the dough back out to 1/2 in thick. Repeat this step 5 more times.
Step 9
Once you have completed all of your folds, wrap the dough back up in syran wrap and let chill for 15 minutes.
Step 10
Flatten your chilled dough to about 1/4 in thick. Using a knife or pizza cutter, cut out 9 squares (just about 4 inches wide).
Step 11
Preheat oven to 400 degrees.
Step 12
In the center of each cutout place 1-2 tbsp of filling. Fold the corners together to create a triangle and press down the edges so they are sealed tightly.
Step 13
Brush maple syrup over the tops and seams of each turnover. You can also add a sprinkle of sugar here if desired.
Step 14
Using a small knife, cut 3 vent holes into the top of the dough. Be careful not to cut all the way through.
Step 15
Bake for 20-25 minutes depending on your oven. Rotate halfway through and watch them closely at the end so they don't burn.
