Step 1
Over medium high heat, begin browning your ground beef
Step 2
Once fully cooked, drain the grease and stir in the taco seasoning
Step 3
Add in your drained corn, salsa, and 1/2 cup of cheese. Mix well

Add in your minute rice and chicken broth. Stir until the rice is submerged
Step 5
Bring to a simmer
Step 6
Once simmering, turn the heat to low and top with the reminding cup and a half of cheese
Step 7
Cover and cook on low for 10 minutes
Step 8
Let set for about 5 minutes once it’s done cooking
Step 9
Top it however you like! I use lettuce, greek yogurt, and avocado. My husband likes it with chips!
